World Famous Italian Sausage Recipe
This unique sausage with its special seasoning should be prepared by the following directions. Since there is a special blend of goat milk cheeses from Italy, avoid over cooking.
NOTE: Since there is no fat in this meat, do not puncture casing at any time so the cheese and seasoning will remain sealed in its casing. Do not cut portions until sausage is cooked. DO NOT BOIL.
METHOD 1: Par boil in 3/4 inch water for ten minutes per side on medium flame. total time 18 - 20 minutes. Remove sausage from pan and place on B-B-Q to BROWN ONLY.
METHOD 2: Low to medium flame - Place coil of sausage on B-B-Q. Close lid, smoke for 10 minutes, turn over for 10 minutes. Lift lid and let casing brown for 2 minutes on each side. Desired cooking time: 24 to 30 minutes.
PAN FRY: Prefer Teflon coated - low to medium flame. Add 1/2 inch water in frying pan. Place amount desired into pan. Cover with lid, fry 10 minutes on each side. Remove cover and fry until golden brown for 24 minutes total.
OVEN BROIL: Put oven rack in lower slot. Set dial to broil. Add 1 inch water into pan. Place sausage in pan, base with water, cook 10 minutes on each side while basting. Remove when golden brown. Desired cooking time: 24 to 30 minutes.
BAKING: Place rack in center of oven. Set oven to 380º and preheat. Add water in baking pan. Bake 12-15 minutes on each side. Desired cooking time: 30 to 40 minutes. If desired, add sliced green peppers and onions and/or potatoes while baking.
When PAR-BROILING or baking, place sausage into 1/2 inch water. As the water turns to goat cheese juice, remove sausage from pan before casing is cooked. Slice potatoes, peppers, and onions and place into pan of goat cheese juice to cook through. Put sausage into dry pan to sear casing on each side until brown. Pour delicious juice with potatoes, peppers, and onions over the browned sausage and serve as a delicacy!
For BREAKFAST pan fry as directed or remove from casing for sausage patties.
